When mornings are busy and in rush, along with a one year old baby clinging to you most of the time, and still you want to serve your family something tasty and healthy in breakfast, muffins are one of the best options. When your little one is in rush for school and is in no mood to sit and eat, handing over a muffin en route to school is the best and filling option. When it is about eating muffin on a regular basis, one can’t imagine to eat buttery, muffin made of all purpose flour and loaded with sugar. So, here i substituted unhealthy ingredients with healthy ones and came up with this recipe of mine.

Ingredients

  • 2 cups whole wheat flour
  • 1 Tbsp flaxseed meal (I used flaxseed powder from Kroger)
  • 1/4 cup chia seeds
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 2 eggs
  • 1 cup maple syrup
  • 2-3 tsp vanilla extract
  • 1/2 cup non fat greek yogurt or full fat yogurt
  • 1/4 cup milk (I used 2% fat content)
  • 2 cup fresh blueberries (rolled in 1 tbsp flour)

Recipe:

1. Preheat oven to 350F.

2. In a bowl, mix whole wheat flour, flaxseed meal, chia seeds, baking powder, baking soda and salt. Mix it.

3. In another bowl, add olive oil and maple syrup and stir up to mix it well. To it add eggs one at a time and stir it around. Add vanilla extract, yogurt and milk and mix until smooth.

4. Add the liquid ingredients to the dry ingredients. Stir it around until just mixed. To this, add the blueberries rolled in flour and just stir it around.

5. Pour this mixture in a muffin tin lined with baking cups. Fill each upto ¾th.

7. Bake muffins in a preheated oven for good 20-22 minutes or until a toothpick comes out clean when inserted in the center of the muffin.

8. Relish the healthy muffins and kick start your day with full energy.

Notes :

1. Once cool, store these muffins in an airtight container.

2. These muffins last beautifully for upto a week. If temp is too hot, keep them in the refrigerator.

3. You can replace 1 cup maple syrup with 3/4 cup of brown sugar.

4. If you are a sweet tooth person and love your muffin to be on sweeter side, you can sprinkle little extra brown sugar over the muffins before baking.

5. If you love a hint of cinnamon, you can sprinkle cinnamon on your muffins prior to baking.
