Are you looking for some delicious and yet healthy recipe for your kids? Then you are at right place. Check out the recipe for crunchy, heathy and delicious Beetroot Vegetable cutlets. Be it kids’ snack, lunch box item, party or picnic; this delicacy is apt for all ocassions. Added raisins gives an extra sweet taste, perfect for kids’ tastebuds. So, without further ado let’s dig into the recipe.

Ingredients
- 2 beet roots boiled
- 3 potatoes boiled
- 1/2 cup boiled peas
- 1/2 cup chopped & boiled beans
- 1 tbsp roasted peanuts or roasted cashews
- Raisins 1/2 tbsp (optional)
- 1 tsp grated ginger
- 1 tsp chopped chillies (optional)
- 1/2 tsp red chilli powder
- Salt to taste
- 2 tbsp rice flour/ cornflour / bread crumbs (I used bread crumbs)
- corriander powder 2-3 tsp
- 1 tsp lemon juice / 1 tsp mango powder
- 2 tsp garam masala
- 1 cup breadcrumbs or rawa (to roll cutlets)
Method:
- Peel and grate beetroot & potatoes.
- Add the boiled and chopped veggies, grated ginger & chopped chillies to it.
- Add roasted cashews/peanuts and raisins.
- Add all dry spices, lemon juice & 2 tbsp on bread crumbs (or rice flour) and combine all to mix well.

- Then, take small amount of mixture and make oval balls.
- Roll each cutlets into bread crumbs spread on a plate.


- Heat oil in a pan.
- Fry the cutlets over medium heat.

- Flip and cook other side, and crispy cutlets are ready.

- Serve it with tomato ketchup or sweet tamarind chutney.
