No Yeast No Egg Baked Vada Paav

How is it going with you all in this Corona virus lockdown period? I hope you are keeping youself and your family safe!

First of all I am sorry for not being regular with my content. I am back to my blogspace almost after 18 months of gap. In short, lot of things have been going on parallely like moving from one country to another and taking care of kids in settling to whole new environment, kept me too stranded. Secondly, thanks to all my lovely friends and readers who had been missing my blogs. I have recieved many messages and requests for various recipe. I am so grateful to all of you for checking about my well-being. And, many of you had been missing my rustic anecdotes. I thought of getting back to my blog with the most requested recipe, i.e., No egg , No yeast Baked & stuffed Vada Paav, which I tried recently.

So, without further any delay lets dive into the recipe.

Ingredients:

1. Ingredients for Vada:

  • Boiled potatoes 4 medium sized
  • 2-3 chopped green chillies
  • 1 inch ginger grated
  • 1 tsp mustard seeds
  • 4-5 curry leaves
  • turmeric powder 1 tsp
  • salt (as per taste)
  • corriander powder 1 tsp
  • chaat masala (as per taste)
  • red chilli powder (if required, as per taste)

2. Ingredients for Dry Garlic Chutney

  • Kashmiri Mirch / Cayenne Pepper
  • Garlic Cloves 2-3 (crushed)
  • Dry Mango Powder 2tsp
  • Salt (as per taste)
  • Oil 1-2 tsp (suffiecient enough to mix the the dry ingredients)

3. Ingredients for Paav

  • 2 Cups All purpose flour
  • 2.5 tsp baking powder
  • 1 tsp salt
  • 3 tbsp oil / unsalted butter
  • 1 tbsp yogurt
  • 3/4 cup milk (or as needed to make the dough)

Recipe:

1.Recipe for Vada:

  • Peel the boiled potatoes & mash them. Keep aside.
  • Now heat a pan, add mustard seed and let them crackle.
  • Now, add grated ginger, saute for 30 seconds. Then, add curry leaves and green chillies.
  • Then add mashed potatoes and mixed it well with the tempering.
  • Next add salt, turmeric powder, corriander powder, chilli powder and chaat masala to the potatoes and mix well.
  • Cook for 2 mins and switch off the gas and set the mixture aside and let it cool down.

2. Recipe for Dry Garlic Chutney

  • Take all the dry ingredients, Kashmiri mirch, crushed garlic cloves, salt & dry mango powder and add 1 tsp oil to mix the ingredients. The dry garlic chutney is ready.

3. Recipe for Paav:

  • Pre-heat the oven at 200 °C.
  • Take a bowl and sieve all the dry ingredients, i.e, all purpose flour, baking powder, & salt.
  • Now, add oil to the mixture and mix well to make uniform mixture.
  • Then, add yogurt and again mix well.
  • Now, start adding milk little by little to knead the dough. The dough must be soft and not very stiff. Keep adding milk and kneading the dough.
  • Knead the dough constantly to make ot smooth. You can remove the dough from the container and keep it on a clean surface and knead it.
  • After the dough becomes soft, keep it in a container and cover it with moist cloth. Let the dough sit for 25 mins.
  • After 25 mins, take out the dough on a clean surface and cut it into 8 equal size with a smooth knife.
  • Now, take each part onto your hand, roll it smooth and pat it on a surface to make it flat.
  • Now, add the dry garlic chutney (at the centre, as shown in image below) to it and then add vada mixture and seal the open edges. Add little oil in your palm to make it round & smooth.
  • Similarily, stuff all the buns with dry garlic chutney and vada mix, make it round and keep them on a greased baking pan / bread pan.
  • Brush the buns with milk to get glaze.
  • Sprinkle sesame seeds over the paav/buns.
  • Now bake the paav for 15-20 mins (Time varies depending on the oven. Keep checking your buns not to get more brown).
  • After 20 mins take out your stuffed vada paav and let it cool down.
  • Now, you can relish them with fried chillies and tea or drinks of your choice!!!
